Casein is a protein found in milk from mammals, including cows, goats, sheep and human beings.

Some people who cannot consume gluten due to celiac disease or gluten intolerance also find they cannot tolerate some forms of casein, especially casein from cows' milk.

Casein is found in virtually all milk-based dairy products, including butter, cheese and ice cream. It's also found as an ingredient in some foods marked "non-dairy," including margarine and soy cheese products.

A gluten-free casein-free diet eliminates both gluten and casein proteins.
