Stir-fried Sliced Fish with Honey Bean and Fresh Lily

Ingredients:

Fresh Lily 150g
Honey Bean 200g
Sliced Fish 200g
Garlic 20g
Ginger 20g
Hong Kong Flour (or starch) 50g
Cooking Oil 300g
Chicken Powder 50g
Salt 30g
Sugar 30g
Stock 300g
Egg white 1

Steps:

  1. Mixx the sliced fish with egg white, Hong Kong flour, chicken powder (10g), salt, sugar and stir well for later use.
  2. Put fresh lily and honey beans into the boiled stock, cook for 3 minutes, and then take out of the wok.
  3. Heat the wok, add 300g oil, heat it to 80oC and add the marinated sliced fish, cooking them lightly with the spatula and drain the oil.
  4. Add garlic and ginger and other seasonings to the wok, pour in the rest of the chicken powder 40g, salt 20g, sugar 20g, and stock, boil and cook it with the spatula until ready for serving.
